I loved making these Plant-based biscuits for the incredibusy salvaged speed loom workshop at Lowie in Herne Hill last night.

Based on the ‘American Style’ choc chip cookies in the Happy Pear Recipes for Happiness book, adapted here for speed and lack of chocolate chips…
Ingredients
½ tablespoon ground flax seeds (I didn’t have any so I used half a teaspoon of chia seeds)
1½ tablespoons water
85g coconut oil
110g brown sugar
1 teaspoon vanilla extract
125g white flour (or wholemeal flour)
a pinch of sea salt
⅓ teaspoon bicarbonate of soda
70g good quality plain chocolate chopped (I used chocolate with hazelnuts)
Method
- Preheat the oven to 160°C/325°F/Gas Mark 3 and line a baking tray with baking parchment.
- Make a flax egg by mixing the ground flax seeds (or chia seeds in this case) and water together and leaving to soak for five minutes.
- In a large bowl, beat the coconut oil and sugar together using a wooden spoon until combined. Add the vanilla extract, followed by the flax/chia egg, and beat in well.
- Sift in the flour, salt and bicarbonate of soda (mix that well as the bicarb is a shocker for clumping together and catching you unawares) and mix until everything comes together into a dough.
- With your hands, form a longish sausage with the dough, then wrap the dough in tin foil and roll gently, and refrigerate for 10-20 minutes – this will make your cookies easier to shape.
- Unwrap from the foil, and slice the sausage with a sharp knife, into about 16 discs, spacing them well apart on the baking tray. Flatten each biscuit by pressing down a chunk of the chocolate into the top surface of each one.
- Bake in the preheated oven for 12-15 minutes, until golden. Cool on the tray for five mins, then move to a cooling rack – I popped them on the rack into the freezer for 20 minutes so the melted chocolate would set quicker – and enjoy!
